Goat Milk Frozen Yogurt

Ingredients

  • 1 cup fresh or frozen fruit
  • 1/2 cup honey or maple
  • 4 cup plain yogurt or kefir
  • Place fruit, honey or maple and yogurt into a blend
  • Mix and process in an ice cream maker
  • Freeze as you would ice cream

Notes: Store bought ice cream has a preservative that keeps it from getting rock hard. I set mine on the counter before we eat dinner (about 10 minutes) before I try to serve it

Berry Kefir Popsicles

INSTRUCTIONS

  • Throw all ingredients into the blender berries, kefir, vanilla, and honey, purée them together until completely smooth. Freeze the purée in the molds until it’s firm, at least 2 hours.
  • We like these stainless steel molds, expensive easy to clean. Fill the popsicles molds to the top then insert your sticks.
  • Freezer until set, I preferably overnight.
  • To unmold the popsicles, hold the mold under lukewarm water for a few seconds until the popsicles release.

Caramel Toffee

  • 1 cup butter
  • 1 cup honey
  • 1 or 2 TBS of water
  • parchment paper

Heat on the stove top on medium high heat string consistently until thickened. The beauty of this recipe is its ease and simplicity. Once the sugar mixture has caramelized, you’re set! Top with melted chocolate, sprinkle with chopped nuts!

Syrup and Jam

  • 2 cups fruit (we used strawberries)
  • 1 cup filter water
  • 1 cup local honey
  • Makes one 16 oz syrup
  • One 8 oz jar of spreadable jam

No wasting here!

Place fruit honey, and filter water in a saucepan. Mix and bring to a boil; boil for about 10 minutes. Reduce heat to medium-low and simmer until fruit is mushy and sauce is thick. Strain strawberries through a fine mesh or cheesecloth in a jar. Scoop out mushy fruit and place in another jar.

Strawberry jam and syrup is complete!

Strawberry syrup is delicious in milk, toppings for pancakes, waffles, smoothies or homemade ice cream
