Place strawberries, honey, and filter water in a saucepan. Mix and bring to a boil; boil for about 10 minutes. Reduce heat to medium-low and simmer until strawberries are mushy and sauce is thick. Strain strawberries through a fine mesh or cheesecloth in a jar. Scoop out mushy strawberries and place in another jar.
