Here is an easy way to make an egg breakfast for a lot of people without worrying about burning the eggs, or cooking them unevenly. You can use any combination of tasty veggies for this.

Ingredients

8 eggs
3/4 cup shredded cheese
4 cups chopped veggies – I used onion, red bell pepper, mushrooms, and zucchini
Ghee

Preheat oven to 350°F.

Melt 1 tbsp ghee in a cast-iron pan on medium heat. When melted, add veggies and sauté until soft, about 10 minutes.
Turn off heat and let the pan cool a bit. Mix eggs and cheese together in a bowl. Add egg and cheese mixture to the pan and spread evenly.

Put pan in oven and bake for 15 minutes. Serve immediately and enjoy!
